Tasting Notes

Hints of white grape and a touch of muscat open the aroma, lifted by alpine herbs and a gentle green freshness. The palate softens into the round sweetness of kyoho grape before deepening into a smooth, lingering rice umami.

The sake rice, Kinmon-Nishiki, is a “phantom” variety grown only in limited areas of Nagano Prefecture — cultivated for us by Farm Ichimaru, rather than sourced through distributors, ensuring traceable, hands-on care from field to brew, a rarity among sake producers.
Its defining character lies in the pure umami of the rice — a rounded depth and a clear, refined transparency that expands gracefully on the palate. This clarity is accented by subtle notes of white grape and alpine herbs.
Our brewery is nestled in the beautiful townscape of Narai-juku, a historic and well-preserved town in Nagano Prefecture. narai uses the fresh mountain water of nearby Kiso Valley, flowing from an altitude of over 1,000m. The water is characterized by its clarity and smooth, rounded texture, brought about by a rare water hardness of less than 25.

Our sake is brewed at an altitude of approximately 940 meters, in an environment blessed with nature and closer to the sky than almost any other in Japan.
While many sake breweries rely on stable well water, narai crafts its sake using natural mountain water flowing from elevations above 1,000 meters. Sourced near the watershed of the Shinano and Kiso rivers, this mountain water is exceptionally soft with a hardness level below 25 mg/L—one of the lowest in Japan. It is characterized by its crystal-clear purity and a round, smooth mouthfeel.

In 2021, under the name "suginomori brewery," we revived a historic sake brewery in the post town of Narai-juku, Nagano Prefecture, breathing new life into its brewing traditions. By listening closely to local farmers and working hand-in-hand with them from the initial stages of rice cultivation, we strive to foster a sustainable, community-driven approach to sake making.
