Tasting Notes
Opens with the scent of cold mountain air. Hints of green apple peel and frosted pear rise gently, layered with a restrained sweetness reminiscent of hon-mirin. In the glass, it carries a subtle cream hue rather than complete transparency, reflecting the inclusion of Lot 1 — a five-year-old Vintage Cuvée.
On the palate, the texture turns rounded and supple. A delicate lactic nuance — reminiscent of yogurt — is joined by a faint suggestion of soft peach. A subtle savory echo of enoki mushroom and aged koji adds dimension. The complexity unfolds gradually, shaped by the assemblage of Kinmon and Sankei rice across several brewing years.

Our sake is brewed at an altitude of approximately 940 meters, in an environment blessed with nature and closer to the sky than almost any other in Japan.
While many sake breweries rely on stable well water, narai crafts its sake using natural mountain water flowing from elevations above 1,000 meters. Sourced near the watershed of the Shinano and Kiso rivers, this mountain water is exceptionally soft with a hardness level below 25 mg/L—one of the lowest in Japan. It is characterized by its crystal-clear purity and a round, smooth mouthfeel.
